My sourdough journey #3

Home Made Starter Update

My starter that I tried to make from scratch unfortunately died. Which was frustrating and annoying. It was my fault though, as I forgot to feed it twice in the span of 3 days (oops).

Back up plan

I luckily had access to already pre bloomed and happy starter, so I was able to continue on my sourdough journey. When I got given my starter it had just been fed and I wasn’t quite ready to make my dough yet. So I put it in the fridge and took it out a couple days later when I was ready to start the process.

  1. I fed the starter even amounts 50 starter/ 50water/ 50flour and put it in the oven just with the light on over night
  2. I then discarded half the starter and put another 50/50/50 split in and legit rise on the counter for 4 hours
  3. I then fed it a 50 gram starter to 60 gram water and 60 gram flour and let it rise for another 4 hours
  4. 4 hours later my sourdough starter is ready to mix into dough

Sourdough

The recipe I used for my dough is from All Recipes. I ended up changing it a little bit as I was using a dutch oven, but over all it worked super well for me.

Things I would change

  • I cut my bread to early so it wasn’t as Ferm as it should have been
  • I think I let my dough proof a little too long, and I think that also contributed to how Ferm my bread was

Things I would keep the same

  • Bake for the same amount of time with the lid on
  • keep my cold proofing the same
  • keep the oven temp the same
  • keep my folds the same
  • Over all 7.5/10 for my first loaf
